LEAN SUTLIJASH (RICE PUDDING)

Sutlijash originates in Turkey, it's a Turkish widely known dessert recipe. Today, it is prepared in every country in the Balkan, including Macedonia. Sutlijash is a family dessert, it's easy to prepare and comes in large quantities. It is usually prepared with milk and rice and here I present you a lean recipe, also delicious and even healthier than the original.


Ingredients: 
  • 1 cup rice (250 g)
  • 1 kg of water
  • 100 g raisins
  • sugar to taste (around 100 g)
  • 1 vanilla pudding
  • cinnamon (optional)
Preparation:
  1. Put rice in a pot of water to boil until it thickens. A traditional measure of the proportion of rice to water is 1: 4. Stir constantly to avoid burning. 
  2. When rice is done, add sugar. Continue to stir. If too thick, add water and stir.
  3. Add raisins.
  4. In the end mix pudding with water and pour this mixture into rice. Continue to stir. The pudding will give a little yellowish color to the sutlijash.
  5. Once fully thickens, move from fire and serve in glass bowls. Place cinnamon on top or add chopped nuts.
